Subject: [PATCH] ci: add nightly snapshot build (02:00 UTC schedule)

Scheduled runs use -SNAPSHOT version suffix and publish to
starshipos-snapshots Nexus repo instead of starshipos-releases.
Push-to-master releases continue to use -<sha> suffix.
